- Peel potatoes and slice to desired thickness
- Preheat oven to 400°F
- In a bowl, add potato slices, rosemary, black pepper, red chili powder, garlic powder and olive oil. Mix well
- Place potato slices on a cookie sheet and bake for 5 to 7 minutes; turn each slice and bake for additional 5-7 minutes until cooked thoroughly
Serve with Salmon and Mango Salsa (see recipe links below); place Salmon on a serving dish, add mango salsa on top of the Salmon and place Sweet potatoes on the side.
