Sweet Potatoes

Ingredients:

Sweet Potatoes
2 Pieces
Medium (~200 grams)
Rosemary
2 Sprigs
Fresh (1/4 tsp. dried Rosemary may be substituted)
Black Pepper
1/4 Teaspoon
Ground
Red Chili Powder
1/4 Teaspoon
Garlic Powder
1/4 Teaspoon
Olive Oil
1 Tablespoon

Preparation mode:

  1. Peel potatoes and slice to desired thickness
  2. Preheat oven to 400°F
  3. In a bowl,  add potato slices, rosemary, black pepper, red chili powder, garlic powder and olive oil. Mix well
  4. Place potato slices on a cookie sheet and bake for 5 to 7 minutes; turn each slice and bake for additional 5-7 minutes until cooked thoroughly

Serving Suggestion:
Serve with Salmon and Mango Salsa (see recipe links below); place Salmon on a serving dish, add mango salsa on top of the Salmon and place Sweet potatoes on the side.
